These easy to make cookies are the perfect treat for Valentine’s day. Red Velvet Cookies are thick, chewy, fudgy and loaded with cookies n’ creme bits.
Looking for Valentine’s day cookies? These Red Velvet Cookies with cake mix are the perfect treat to celebrate. Not only are they all the colors of the day of love, but they are also sweet and scrumptious. I always have trouble eating just one!
I love using cake mix in my dessert recipes. If you are a reader of this blog, you’ll know that from many of my other popular desserts with cake mix. Try my Caramel Apple Dump Cake, Cool Whip Cookies and Oreo Cupcakes.
You can have a batch of these cookies baked from start to finish in about 25 minutes. This recipe makes about 20 cookies.

Ingredients for Red Velvet Cookies
- Red velvet cake mix – You are going to using the actual cake mix powder in the box. DO NOT prepare the cake according to the box directions.
- Eggs – Make sure they are room temperature for best results.
- Vegetable oil
- Hershey’s Cookies N’ Creme candy bar – Chop up one candy bar into pieces.
- Pink sprinkles
- White sprinkles
How to Make Red Velvet Cake Mix Cookies
Step One: Preheat oven to 350F. Line a baking sheet with parchment paper and set aside.
Step Two: In a large mixing bowl, mix together red velvet cake mix, eggs, and vegetable oil. The batter will be thick.
Step Three: Add in the chopped candy bar, pink and white sprinkles.
Step Four: Scoop out a tablespoon of batter and place it on a parchment-lined baking sheet.
Step Five: Bake for 10 to 12 minutes just until cookies start to crack.
Step Six: Remove from oven and allow to cool before serving.

- Use another kind of cake mix if you can’t get red velvet cake mix. Chocolate cake mix would be yummy!

Recipe Tips
- If you are making several batches of cookies, always let your baking sheet cool before putting on more cookie dough. If the baking sheet is too hot, your cookie dough will spread out faster making them flatter.
- Use a medium cookie scoop to measure your cookie dough. You’ll want the cookies to be the same size so that they will bake evenly.
- Line your cookie sheet with parchment paper for easy cleanup and quick release of the cookies. No stuck on cookie dough to scrub off!
- Look for sprinkles at any baking store. Walmart also has a variety including the brand Alma’s. They carry several different colors that you can use throughout the year.

Ingredients
- 1 box red velvet cake mix
- 2 eggs room temperature
- ⅓ cup vegetable oil
- 1 4oz Hershey's Cookies N' Creme Candy Bar chopped
- ¼ cup pink sprinkles
- ¼ cup white sprinkles
Instructions
Preheat oven to 350F. Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, mix together red velvet cake mix, eggs, and vegetable oil. The batter will be thick.
